Football Clinic with a Pro

One of our favorite parts of this weekend included a football clinic with NFL quarterback Ryan Fitzpatrick (formerly of the Texans and currently of the Jets). He's a great player and more importantly he's a dad. A dad who cares about the school where is children attend, being in community and giving back. 

Our second grader, Maddux loves football and he and his dad attended one Texans game this year. Can you guess which one? Let's just say the quarterback set franchise records! 

We would see Ryan in the halls dropping off kids for school in the morning and Maddux would often say that he wanted to tell him that he had a good game. But, he didn't. He was feeling a little shy. So, when this opportunity came up to participate in a clinic with Ryan, we knew it was the perfect thing for our Maddux to participate in. And, it truly was. They enjoyed doing all kinds of football drills and then played a scrimmage with their favorite NFL quarterback! What a day. I didn't want to share pictures with other children, so I will just share these three of Maddux  and Ryan Fitzpatrick. But, I think they show what a special day it was. Truly grateful to Ryan, his family, his wife who is due with their fifth child any day now, our amazing school and the moms that set this whole thing up. You guys rock the red carpet and more!

Yummy Gluten-Free Drop Biscuits Recipe

1 3/4 cups Gluten Free All Purpose Baking Flour (Bob's Red Mill)
1/2 cup of Gluten Free Organic Sprouted Brown Rice Flour
3/4 tsp salt
1 tsp white sugar
3 tsp baking powder
1 tsp xanthan gum
8 tablespoons of unsalted butter cut into 1/2 inch pieces
1 cup of milk
1 egg
1/2 cup of grated cheddar cheese

Xanthan Gum in package

Preheat oven to 400 degrees F
Mix the first 6 ingredients. Place in mixer with biscuit cutter attachment.

Mix on low with butter
Slowly add in milk and 1 egg
Once mixed, add in 1/2 cup of grated cheddar cheese and mix on a slow speed

Scoop 1 tablespoon full of dough and drop on buttered iron skillet. 
Bake in the oven for 10-14 minutes. Until golden brown.
Makes 12 Yummy Gluten-free drop biscuits! (I made 9 today, because I am using the extra dough to make gluten-free kolaches!)

A Day of Love with the Els

Around here, we love love. So, celebrating a day that is supposed to be all about love is a day that we can't pass up. The last few years my sister in law and I have enjoyed planning these little "parties" together either at her house or mine. It's really for our 8 kids but we always end up enjoying these kid friendly celebrations. 
The Els helped decorate. We made valentine chains and hung them as decoration throughout the house.
My sil made valentine themed chocolate covered pretzels and chocolate covered strawberries. We placed them in cute tins from last year and they made very cute table decorations.

My first attempt at making homemade lasagna was a success. There was none left!
My mom made large heart shaped cookies for the kids to decorate.
